Description
Thai Salad With Peanut Dressing Is a Light and Healthy Salad Recipe That’s Packed With Flavor and Crunch!
INGREDIENTS
  • 2 cups mixed salad greens
  • 2 cups coleslaw mix (red cabbage, green cabbage, carrot mix)
  • 1 English cucumber, sliced or julienned
  • 1/4 cup red onion, finely chopped
  • 2 carrots, julienned
  • 1 red pepper, julienned
  • 1/4 cup mint, roughly chopped
  • 1/4 cup cilantro, roughly chopped
  • 1/4 cup peanuts, roughly chopped
  • Bean sprouts, if desired
  • Thai Peanut Dressing
  • 1/3 cup creamy peanut butter. (make sure it’s only peanuts & salt!)
  • 4 tbsp honey
  • 4 tbsp hot water
  • 2 tbsp gluten-free tamari, soy sauce, or coconut aminos
  • 2 tbsp rice vinegar
  • 1 lime juiced
  • 2 tsp toasted sesame seeds
  • 1 tsp toasted sesame oil
  • 1/4 tsp ground ginger
  • 2 cloves garlic, pressed or finely minced
  • Salt and pepper
Instructions
  1. Chop onion and soak in water for 5 min. (This will take some of the “bite” out of the onion.)
  2. Slice cucumber, red pepper, and carrots
  3. Place salad leaves and coleslaw mix in large bowl
  4. Top with onion, cucumber, carrots, and red pepper
  5. Add ingredients for Thai peanut dressing into a mason jar or bowl, then shake or whisk to combine. Taste, then adjust lime juice for more acid, and/or add water to thin if necessary
  6. Drizzle desired amount of dressing on top of salad and toss well to combine
  7. Top with mint, cilantro, peanuts, and bean sprouts, if desired
  8. Serve with additional lime wedges
Note
  • Top with chicken for added protein
  • You can use regular soy sauce in the dressing but then it will not be gluten free
