Thai Peanut Dressing

Instructions

  1. Chop onion and soak in water for 5 min. (This will take some of the “bite” out of the onion.)
  2. Slice cucumber, red pepper, and carrots
  3. Place salad leaves and coleslaw mix in large bowl
  4. Top with onion, cucumber, carrots, and red pepper
  5. Add ingredients for Thai peanut dressing into a mason jar or bowl, then shake or whisk to combine. Taste, then adjust lime juice for more acid, and/or add water to thin if necessary
  6. Drizzle desired amount of dressing on top of salad and toss well to combine
  7. Top with mint, cilantro, peanuts, and bean sprouts, if desired
  8. Serve with additional lime wedges

  • Top with chicken for added protein
  • You can use regular soy sauce in the dressing but then it will not be gluten free
